I made these as directed (except I omitted the nuts and they were great. The texture was perfect - crispy then melt in your mouth. I then made them with 1/4 tsp peppermint extract instead of vanilla and added crushed candy cane on top - they were perfect for Christmas gifts.

This was my first time attempting meringue cookies and I found it easy, and the outcome simply delicious! I usually don't bake much because I am way too impatient for all that measuring and waiting it takes, so I had a hard time waiting for the eggs to come to room temperature. Even so, the meringues still came out a good texture. Next time I will only use 1/2 tsp of vanilla extract. It was good, but a tad much for me. I omitted the walnuts because I have a family member who's allergic, and used mini chocolate chips instead. The only reason why I did not give this recipe 5 stars is because of the vanilla, and they just weren't as crispy as I usually like, judging from what I've had elsewhere.

I have never tried making meringue cookies before but I have always wanted to try them and this was the first recipe I came across and the cookies turned out better than I had expected!! I left out the chocolate and nuts and thought they were pretty good maybe next time I will try one or the other..

I was looking for something easy and fast to cook because I like looking for new things to cook. I tried one after 2 hours just to sample one and these are absolutely AMAZING!!!! i did not include the nuts for personal preference but I did put the chocolate chips and I was just absolutely intrigued about how light and amazing they tasted. they were very easy to make

This was the first Meringue cookie recipe I've ever tried and it's a definite keeper. I omitted the nuts as a personal preference, and it came out great! Light, crisp, and yummy! You literally forget about them being in the oven, then wake up in the morning to discover a sweet treat just waiting there that you probably forgot about making!

These cookies are so good. They come out nice and crisp. Best part is they use no butter or flour! Make sure you egg whites are at room temp.

AWESOME, AWESOME, AWESOME. As a neophyte dessert cook, I looked for a recipe for my egg whites. Doubtful as I've never made Meringues before, I read & followed the instructions clearly...and I had superb Meringues. The reason Emeril is as good as he is: he writes recipes for everyone to understand (others on this network should take note! I have yet to fail at one of his fantastic concoctions. Here's to you Sir another winner!

i always buy meringue cookies from a french bakery. i wasn't quite sure about making this cookies. i followed the recipe and made exactly 48 of them. i tried one after 2 hours and didn't like it much. so i left them in the oven over night and it tasted much better next morning. i will omit the chocolate chips and vanilla extract next time and will use rosewater to have a different flavor. it is very very low cost recipe. i will use it for my husband's big party.
