This is an awesome recipe for pancakes. I've tried different add-ins and everyone (kids and adults alike loves these. Each cake is light, fluffy and has just the right amount of sweetness (especially for those of us that aren't big syrup fans. The recipe makes quite a few pancakes, so make sure you're feeding a crowd or bringing your appetite!

My boys are the hardest kids to feed. All but the youngest (the pickiest loved them! Two had them plain and one had bananas. Hubby and I both had blueberries. So good! This is definitely a keeper.

I was craving fluffy pancakes and this recipe provided just that! I replaced the melted butter with unsweetened apple sauce for health reasons. Even my father enjoyed them! They were moist and perfect for satisfying that comfort-food craving!

I have been searching for the best light and fluffy pancake for quite awhile. My search is over these are delicious. Light, fluffy and tasty. They are good with or without blueberries. I tried macadamia nuts with coconut syrup too. They are all good. Next I'll try bananas and pecans! Give them a try and be creative with your flavors.

This recipe is the best pancake recipe I've tried. It's easy to do and the result is the ideal traditional pancake, even without the blueberries.

I mixed the sugar in with the wet ingredients instead of the dry - probably doesn't make much difference.
