This batter is great to use for all sorts of pancakes, i.e blueberry, banana and chocolate chip. I've made this twice already and each time it has turned out perfectly, fluffy and delicious!

This recipe makes the fluffiest pancakes I have ever made. I just barely mixed the wet into the dry until I couldn't see any dry ingredients anymore, but it was still VERY lumpy. I wasn't sure if I had mixed it enough, but the fluffy half inch thick pancakes were delicious. I used a 1/4 cup ice cream scoop to portion them and I got 10 4-5 inch pancakes out of the batter. I didn't add blueberries this time, but they were still great and very tasty. Next time I think I'll either use less batter per pancake or try to spread the batter out a bit more so that they aren't quite so tall each. Overall a great pancake recipe that is very easy.

These were so good. My husband loves blueberries so I made this for our anniversary breakfast and he LOVED them. We used the blueberry syrup from Kathleen Daehlemans too and it was delicious together.

My boyfriend and I made these for a leisurely brunch. They were delicious. We only had frozen blueberries on hand, but they worked out perfectly. Will be making again!

these pancakes are soft and fluffy and moist. I added a little bit of vanilla to them but the basic recipe is right on.

so light and tender, I was suprised they came from such a thick, goopy dough. Once it was mixed, I was careful not to stir anymore, and let the leavening create the bubbles. Procedure is 50% of the success.
