Very often it is difficult to find the perfect balance of oil and vinegar in a salad dressing, but these proportions are close to perfect (I just added a touch more vinegar. I also added two pinches of dried oregano and basil each for a bit of additional flavor, but otherwise it is a great basic balsamic vinaigrette!

Far more flavorful than most of the vinaigrettes I've tasted, this recipe actually trumps dressings I've had in some very fine restaurants. The only change I'll make next time is to cut back slightly on the oil. (I suppose I should've followed the advice of previous reviewers. However, even followed exactly as written, this recipe is still fantastic. Thanks, Emeril!

I have never had good luck with Vinaigrettes! They have always turned out a little bland, or just... off. But I tried this recipe last night and it was wonderful!!!! My husband and I both agreed it was the best vinaigrette either of us had ever had. I think the brown sugar helps a lot. Never tried that ingredient before, but it worked really well. Dressing was not too acidic, the texture I want dressing to be and not bland at all. Thanks Emeril!!! :

I am so glad I found this simple recipe. I had made a balsamic dressing before but didn't pay much attention to the amounts of oil/vinegar. I wanted something that was tried and true, and this is it. I substituted the garlic for 1 T. of minced shallots because my salad had fresh strawberries and orange segments, I didn't want garlicky berries. The shallot was nice and gentle. I also excluded the brown sugar as the balsamic that I use is particularly sweet. I put all the ingredients in a plastic container, shook them up and served.

This was soooo goood!! I tried it after making Emeril's lemon vinaigrette (also a favorite and it didn't disappoint. It has so much flavor and is a little thick, almost like a balsamic glaze (I cut back on the oil a tad. If you want to be really naughty, drizzle over Ruffles potato chips...heaven!

I LOVE balsamic vinaigrette dressings and this one looked especially easy. I followed a few of the other reviews and scaled the oil down about 1/2 C, used a really good balsamic vinegar, threw in a pinch of extra dk brown sugar and was instantly in love.
I served over a spring mix salad with cherry tomatoes, cucumbers and fresh sliced mushrooms and have never been happier. My boyfriend usually won't touch anything besides zesty Italian but he wanted to try this because I made it, and now I've made him a believer as well! I'm going home to make a big jar of it tonight!
