I made this chicken back in Spring and forgot to save the recipe. I'm so happy I found it again, its great! All my friends loved it and asked me to make it again. Really great recipe

And it was still the best roasted chicken I've made! SO moist and full of flavor.. this will be my "go to" for now on. I cut up a few Yukon Gold potatoes, a sweet potato, and carrots- absolutely delicious! Can't wait to make this chicken recipe right side up = Thanks, Tyler!

awesome chicken dinner, super easy to prepare. very little prep and no watching. rubbed skin with olive oil and extra herbs before putting in oven to roast. didn't baste every 20 minutes and skin skill can out golden brown and crispy. also added sliced mushrooms last 15 minutes. wiill definetly make again. highly recommend.

This recipe is simply delicious. It is very easy to follow and the ingredients are easy to find. The chicken was very juicy, tender and flavorful. I plan on making this at least once a week. The aroma from the herbs is just amazing.

This chicken came out very tender and flavorful! It was much better than buying one of the rotisserie chickens from the grocery store because you control the amount of salt. I used the drippings from the chicken and added a little corn starch and it made a great gravy!

I had to make some substitutions as I just used what I had on hand but this chicken turned out great and these were the best flavored potatoes that I've ever had.
I used yukon gold and they were large so I chopped them into smaller pieces similar to baby reds.
I used 1/2 cup of canola oil and only 1/2 a lemon would fit in the cavity.
I also used a poultry seasoning mix of fresh herbs from the store, I believe it had fresh thyme, rosemary and sage in it but no parsley.
I also used a little chicken stock to help baste it.
