this looks great and can't wait to try it. However, I am puzzled by this recipe and the other turkey soup recipe I DID make from Michael Chiarello (also wonderful. If two quarts equals 8 cups, how can this recipe yield 10-12 cups of broth? (as stated by recipe. Had I known I should literally have filled the stock pot to the brim, as with cooking time the water really goes down, I would not have had a disappointingly but delicious small amount of stock left over.
Hope the next soup recipe is more precise.

WOW! This GOOD! I had a few deviations from the recipe: had leftover smoked turkey instead of roasted (added flavor from the smoked meat and stock, whole wheat dressing, canned mixed vegetables of carrots, corn, green beans and potatoes which I brightened up with fresh, onion, celery and garlic. This will become a Thanksgiving-leftover staple for us!

This soup is AMAZING! I had my annual Thanksgiving dinner at work, on Nov 17th. I brought home a turkey carcus, cornbread stuffing, green beans, mashed potatoes, and gravy. Made this soup and took it to work, the following Tuesday. My family and my co- workers loved it.We went to a friends house for Thanksgiving, and made a pot of the soup for them out of thier leftovers they tasted it last night and really liked it, but was to full from dinner to eat anymore, they said they will eat it for lunch today. This will become my new family tradition every year and may just have to make it any time of year! You must try it!

This soup is delicious and easy to make. I made this last year and my 8 yr old son is excited that I'm making this soup again with Thanksgiving leftovers.

Loved this soup. I threw the carcass with a lot of meat still on it into the crock pot with 6 cups of low sodium chicken broth and 5 cups of water with Minor's Turkey base. Hey, it's T'giving and all I had is a measly bunch of celery and a cup of diced leeks, pepper corns and a bay leaf. The entire house had the aroma of the soup. I made the dumplings and just had to try them- slightly more dense than a matzoh ball, but more flavorful. I'll cool it tonight, skim the top and add my vegetable tomorrow. But this is a winner and sooooooo easy.

OMG!!! This recipe was absolutely delicious. Only change I made was that I added a handful of frozen peas with other veg - that's it.My hubby makes the best stuffing, and as a result, my dumplings were scrumptious..Try it -you'll like it

I was a little unsure of the stuffing dumplings, but they were fantastic! My stuffing was pretty chunky, so I had to chop it up a bit to make it more dumpling-friendly. The soup was perfect and used up just about all the leftovers I had. A new family tradition was started last night!
