My mom has made a variation of this recipe for most of my life, so I was already familiar with the flavors. She added cracklin for added crunch.

I made Sandra's recipe today and was not able to find the recommended Mrs. Dash. So, I end up grinded my own chipotle power and OMG! It was AWESOME. I also made jumbo muffins instead of the mini ones and they were probably the best corn muffins I've ever had.

Oh yeah, I almost forgot, I used roasted chilles with garlic. Fabulous!!!!

I messed this recipe up and it still tasted great! I misread the recipe and only used a small box of Jiffy mix (not the 14 oz one. Needless to say the muffins did not turn out right -- they were extremely mushy, but the flavor was outstanding! My family ate them all up anyway! I also used a normal sized muffin pan. Only make 1/2 the butter recipe.

Everyone raved about these muffins and the butter. They were better than the chili I made to go with them.

This recipe was great with a nice pork stew. The butter was a hit with my teens. I made them into large muffins though instead of the mini one

It's so different and the butter is excellent!
