We were in Costa Rica last week and loved the food. This recipe was delicious, fast, & easy! I did use a little less salsa than called for (1-1/2 cups vs. 2. The pineapple makes this dish. We have lots of leftover rice to pair with something else!

I think that marinating the fish for twenty minutes in so much acid ruined the fish and made it mealy and not very appetizing. Also, I had a nice ripe very tasty pineapple that overpowered the dish. You could hardly taste the other components, even the homemade salsa that on its own was pretty spicy. Maybe you should halve both the marinating time and amount of pineapple.

Delicioso!! The flavors of the rice with the fish provided a perfect pairing. I didn't have salsa so I subbed a can of diced tomatoes, chopped jalepenos, onion and some Ortega taco sauce for the salsa which turned out GREAT! I also subbed flat leaf parsley for cilantro (my honey doesn't like cilantro and the dish didn't miss a beat. I also only used a bit over a cup of fresh diced pineapple (instead of 2 cups and that turned out to be the perfect sweet compliment to the spicy. Absolutely loved this meal!

This recipe was very flavorful and easy to make. It was on my table in 45 min. The only change I made was to use less salsa (what I had on hand and cuban style black beans that I did not rinse. The rice had just the right amount of kick. I will definately be making this again and again! Thanks Ingrid!

This recipe was very good! I left out the sugar and added Crushed Red Pepper flakes to the marinade to give it a little kick. I also used vegetable broth instead of chicken broth to cook the rice, but I always substitute those. My boyfriend loved it and he usually hates cilantro. It would probably have been even better if I had made the salsa myself, but I used a store bought jar and it was great! I will definitely be making this again!

Tasty loved it and easy to make. Only one issue. As a resident of Costa Rica, I don't see much of the local culture in this dis. It has too many flavors. Ticos (as they call themselves are not inventive in their cuisine and prefer very simple dishes with little or no flavor. Of course that observation is made from my perspective as a Texan. But it is a tasty dish, just not one you are likely to see in this country.
