    For long I wanted to try the green curry paste but could not due to calling for lots of ingredients. This one was easy reachable and tasty.

    I made this with the addition of cubed eggplant, and when I tasted it there was still something that wasn't quite right. There is no fish sauce in this recipe (I thought fish sauce was a staple in Thai curry dishes. So, I added a few splashes of fish sauce and served it over rice--it ended up tasting pretty good.

    This was the first time I had attempted a curry. It was tough to find all ingredients, and I wasn't able to find thai chiles, kaffir lime leaves, or the shrimp paste. Substituted one tin of anchovies and also a little fish sauce(shrimp paste, and 10 serano chiles(thai chiles, and went without kaffir lime leaves. This dish ended up tasting amazing and was comparable to my favorite Thai restaurants versions of this. I highly recomend this recipe!
