Delicious! Spicy and fresh tasting. Didn't use the okra because I couldn't find fresh. Doubled the carrots and didn't use baby, used chopped regular ones. It was a big hit!

I used more cayenne, pepper, and okra. I thought the flavor was awesome, and it was pretty filling. The only thing that I didn't like about the recipe was how long it took to cook the spelt. I think I would prefer to use brown rice next time.

Loved this dish! Lots of veggies, flavor, and filling. Doubled the amount of okra, which was nice because some melted in and some pieces were a bit firmer. Used canned diced tomatoes, which gave it a slightly tomato based sauce in addition to the veggie stock. Used recommended stock amount because it took time for the farro to soften. I think it would be great with arborio rice too, but the farro has a bit more nutty character and nutrients.

This recipe is full of flavor, not to mention it's loaded with veggies. I was surprised to read that some reviewers increased the quantity of vegetable stock. I used closer to 4 cups instead of the prescribed 6 and I found that I was still ladling liquid out of the pot. Perhaps I put in too much to start with instead of 2 cups at a time to let it be absorbed. This dish also scores very well in terms of limited cleanup (just a few pots, and it tastes very good the day after so no harm if you want to cook in bulk and have a tasty dinner the next few days with only 60 seconds in the microwave. I will definitely put this into the regular meal rotation.

I couldn't find farro or spelt so I used quinoa. It turned out fine and would be okay as a side dish but it wasn't very satisfying as a main dish. Maybe it would have been better if I could have found farro or spelt????

Had vegan guests coming and gave this a go. Good flavor and texture, although it took a lot longer, and a lot more stock than suggested. I did, however, use whole grain, long grain rice instead of Faro. I up'ed the cayenne from previous comments and added a little too much.
Ended up tasty and filling all the same.

after reading some of the comments, i decided to add more spice like most suggested. I added 3 springs of thyme, in addition to the bay leaf, 1 tsp thyme, 1 tsp paprika

It was good, but needs a LOT more spice! I used cajun seasoning and poured it in there. I also used brown rice instead of farro which was delicious.
