This was DELICIOUS, and very simple. The Red Pepper flakes add a bit of heat but you can add/decrease depending on taste. It called for a pound of pasta which I found to be a bit too much. I would back off the amount of pasta to maybe 2/3 box to ensure there's enough "sauce" to taste.

This is a take on the classic garlic and olive oil dish I grew up eating. Its a fast, fresh and cheap pasta that requires some great cheese and great garlic (no easy feat. I don't like the addition of mint leaves at all. Also, 1 tablespoon of crushed red pepper is stupid. Either its a typo or a gross miscalculation. Its either a teaspoon or insane. When do you ever put a tablespoon of crushed red pepper in anything? Thats enough to spice up chili. It will completely overwhelm a delicate garlic/oil/cheese dish. Adding the pasta water makes the garlic stop cooking; I've never started a fire that way.

This took no time to make and was simple and delicious. I'm not normally a huge fan of spicey, but the heat was very satisfying in this dish.

We loved this recipe but it was way too spicy with the tablespoon of red pepper flakes. We like it with only about one teaspoon.

I discovered this dish is Fiesole, Italy and as soon as I got back home I looked up the recipe. This is the closest thing to the wonderful meal I had on my honeymoon outside Florence.
