Had neighbors for a last minute dinner......
This recipe was not only a huge success, it took so little time to prepare I wasn't missing the fun.
Heat the serving platter so the crabs stay warm while reducing the sauce.
YUM!!!!

Wow, this was so simple and delicious for my first try at soft shell crab! Try seasoning the flour with some of the essence for a some even better flavor.

The best soft shell crabs I ever tasted! Most recipes disquise the taste of the crab, this one allows you to savor the true flavor of the crab.

This is the best I am sure. I have been cooking for 50 years and I can tell just by reading a receipe, that it is great. I live alone and love the simplest seafood receipes, so this will be a favorite when ss crabs are in season. Emeril, you are the greatest. I hope someday I can make a trip to your show. My husband is in the fish business and brings me fresh soft shell crabs in season. This is the best recipe and makes them look and taste just like in a restaurant
