Perfect! This was the best flan I have ever made, or had for that matter. The cinnamon was a perfect complement.. I made a double batch that fit perfectly in my quiche dish, had to bake it for about an additional 20 min.. Great!

Once you make this, you'll crave it over and over again. I grew up with flan as a staple for dessert, and this is the best I've tasted. Paying for the vanilla bean is worth it... just doesn't taste the same with extract

I made this flan for my friend who is Spanish and he was impressed. Like many, I also had to keep adding 2 tbsp of water at a time as I caramelized the sugar because it crusted over too soon. I have made it twice now, once with vanilla bean and once with vanilla extract. I must confess that I don't feel the vanilla bean is worth the expense or trouble in this recipe. It was great both ways.

This was the first flan I have ever made and it tasted better than most I have had in restaurants! However, I did encounter a big problem carmelizing the sugar. On the THIRD batch, I doubled the amount of water and it finally carmelized instead of crystalized. But the flan was creamy, rich and wonderful!

I've cooked Flan for my mom on Mother's Day & boy she loved it. She took some back to work the next day & it was still as great! Everybody enjoyed it & of cuz i photocopied the recipe for them! : a must try item!

i was very worried about this recipe b/c i had never made caramel before and i thought that it didn't really turn out right.. but we tasted it and it was fantastic. very good and the caramel was not ruined!

Only thing I did different is to add an extra cinnamon stick, b/c I love cinnamon-it was perfect. Just like the Flan I enjoyed in Latin America!
