    I love this lime dressing. I actually prefer it with romaine, cucumbers, carrots, cherry tomatoes and fresh parm cheese. It's wonderful!

    Rachael really knows how to use simple ingredients to create a BIG taste. My husband loved this! I also made it for a girl's lunch, and they raved! YUM-O!

    I couldn't find watercress and substituted baby Arugula. The mint taste is very subtle and lovely. Tastes really fresh. The lime dressing is fabulous great with the mint.

    This was one of the best salads I have ever made in my entire life (and believe me thats a long time You should make it and enjoy it as much as I did!!!
