I made these for Christmas using Ghirardelli chocolate chip cookie mix, and Ghirardelli bittersweet choc chips. I bought choc flavored whole coffee beans and ground them myself. I also used regular instant coffee instead of instant espresso. I was a little worried about having coffee 'grounds' in my cookies, but fear not. These are some of the best cookies I have ever made, including many from scratch. Everyone who loves chocolate and/or coffee loves them. And you had better love chocolate! They are decadent. Just the thing when you are really busy and can't spend a lot of time with from-scratch recipes.
I did chill the dough before baking them, as I had so many types of cookies going at the same time, and I like the results that gave me. I used bittersweet chips since I didn't have time to chop chocolate into chunks, and I highly recommend Ghirardelli cookie mix. Try these - you will really love them.

I have made these for two different Christmas parties now, and they have been a big hit. I just used a Betty Crocker cookie mix, and Hershey's special dark chocolate chips. As the grocery store in my little town didn't have anything else. I also used 4 Tbsp of Folger's instant coffee for both the instant and grounds in the recipe If you love chocolate and coffee you'll love these. Even as a non-coffee drinker I thought they were pretty good.

Looking for something different for Christmas, I came across this receipe, and they were the family favorite this year. I gave the recipe to EVERYONE. Easy, delicious, and keep well (if you can keep them around! Definitely good for coffee lovers and chocolate lovers alike. TRY THEM!

Anyone who has ever tasted these cookies just loves them. I swear by the Ghiradelli cookie in a box mix. I am a baker and as much as it pains me to use mix from a box, Ghiradelli brand is the only way to go in this recipe. I was nervous about the coffee & espresso textures after reading the reviews, so I use 1 cup of dark chocolate covered espresso or coffee beans - this takes care of the 1 cup of extra chocolate and also the coffee. I add a dash of cinnamon, as well. People rave about them about work. Great & easy recipe!!!

These are THE BEST cookies I have ever made! The Kahlua in them is so good! I only made a few substitutions by just using semi-sweet chocolate chips instead of bittersweet chunks, and 4 tablespoons of instant coffe granules instead of ground beans plus instant espresso. I don't think the texture of the ground beans would be very good but... GOOEY AND RICH AND DELICIOUS!!!!

I have brought these cookies to two gatherings and it was an enormous hit at both. With the second batch I added an extra tablespoon of Kahlua, otherwise the taste is nearly non-existant. Even with the extra liquor, make no mistake, this is a coffee lovers cookie. I would suggest instant coffee in place of the instant espresso (the recipe says either will work b/c it is less bitter. These were an enormous hit, and are perfect for a potluck or any group gathering.

I make these cookies every year for holiday gift giving and every year I'm asked for the recipe--they are that good! Especially if you love dark chocolate, coffee and Kahlua! YUM-O

I was missing a couple ingredients (instant coffee & choc chunks for this recipe but it still came out ok so if followed exactly I think they'll come out great.

Made these as part of my Chistmas cookie batch last year. People that don't even like coffee liked them! I used a box mix that already had walnuts in them (to help cut costs and they still turned out great. I also doubled the recipe and used a big stand mixer which couldn't have made it any easier - just drop everything in! Used a cookie scoop so they were uniform in size. Let me just say there weren't many left to add to my Chistmas gift baskets - everyone in my house ate them too fast!
