    Awesome. Tastes just like my grandmothers! i went with the 3 Tbsps of cheese. I also left out the onions, as my old Mama Nell never used them in her fritatta. I am a relative nooby in the kitchen, but I pulled off the plate flip relatively smoothly.

    This recipe is a bit messy to make (mainly due to the flipping of the frittata, but it's quick, easy, and delicious. I usually serve it with a big salad and grilled bread (see Everyday Italian for that recipe. Everyone who has had this asks for the recipe!

    cut the potatoes into small slices and brown. do not add onions until potatoes are almost done.
