After having made Alton's red snapper in parchment two days before, and being blown away, we were very disappointed in this ramen shrimp pouch dish. We served it to guests, luckily very good friends, and although they typically like anything put in front of them, they were equally unimpressed. Increased the liquid as everyone suggested, but there just really was no flavor. The first word that comes to mind is "boring".

Alton has done it again. Great taste, easily available ingredients (for those who couldn't figure out what mirin was, there's this thing called google, and my kids (4 & 7 loved making their own pouches. I changed a few things. I made sure to buy reduced sodium soy sauce & the lowest sodium veggie broth available & eliminated the kosher salt. The dish was perfectly seasoned this way. Also, I weighed all the pouches to make sure that I had distributed the liquid evenly (each pouch weighed 1 pound to 1 pound & 1/4 to 1/2 ounces; yes I am a former lab geek. At 15 minutes, the noodles were still slightly firm, but at 17 minutes, they were perfect. I used heavy-duty foil in double layers & had no problems with noodles poking through. It's been a long time since the dinner table was that quiet. Thanks, Alton!!

The cooking method is the only part of this that's tricky. Just use the heavy duty foil, and it's a snap; doable over a camp fire...
A bit too much mirin for my tastes, but very adaptable. Fun for the kids, too.

This is very good and very fast. You must use better quality aluminum foil or your get holes (and leaks. Simple and you can customize it for people on special dates or those who have particular tastes. We've made it 5 or 6 times now.

Super easy and really good! The first time I made this I made the pouches too small and some of the broth seeped out and the noddles didn't get all the way cooked. So make sure you have plenty of room for all the ingredients and and the broth.

Great recipe to do with kids. My boys love ramen noodles and this is a fun and nutritious recipe that they can prepare themselves!
