This was quick, simple and delicious. My whole family loved this. I've always been afraid of flank steak because it turns out so terribly tough. Tip: don't cut at an angle, but straight down so the fibers are shorter.
This recipe is a keeper.

I pre-prepared the rub and the dressing and took them to a camping trip with a bunch of friends (four couples. I made enough for everyone (four flank steaks and lots of salad. We had sour dough french bread with garlic rub and a nice Merlot. It was a hit and so darn easy, one pan, one bowl. It was delicious and everyone loved. I will make this recipe over and over. Of course I left out the anchovies and fennel seeds also. Was tempted to leave out the thyme but said "what the heck" and put it in. I wasn't sorry as they turned out great even using a sirloin steak. Quick and easy. Thanks

I really enjoyed this recipe. I couldn't believe how tender and flavorful the meat was. I would probably add less fennel next time just because the smell was really strong in my house afterwards. The salad was great too minus the anchovies :
