OMG! This was the first time I ever made these! I was a big hit on Christmas Eve and New Year's Eve! Thank you Giada! :-

these are super exciting little loves. The only thing I didn't like is the size of the filling - the recipe would be better with 1/2 of the mixture and it would also save up some money. I also baked them for 37 minutes only with no egg wash and they came out beautiful. It's like a miracle. I think I will stop buying the ones in the freezer section in store and I will make my own from now on! yay for Giada. plus, neighbors and my hubby were amazed that they were homemade. now that's a home run:D

These are so delicious. Very easy to make. I did have to add about a tablespoon of flour to the dough mixture because it was too wet but other than that, this was perfect. They baked for 35 minutes in my oven. I think I will add the cheeses to my mixer next time in order to get a more creamy texture. Thanks Giada!

DELICIOUS!! I YIELDED 10 FROM MY DOUGH AND BAKED THEM AT 375 FOR 37 MINUTES AND THEY WERE PERFECT! WHAT I DIDN'T DO WAS EGG WASH THEM, THE DOUGH ALREADY HAD 2 EGGS IN IT AND EGG WASH MAKES THINGS BROWN QUICKER. MINE WERE A RICH GOLDEN AMBER. AS FOR THE CHEESES I CREAMED THEM IN MY MIXER AND HAD LESS RICOTTA TEXTURE, IT MADE IT SMOOTHER. EASY DESSERT, GREAT PRESENTATION AND YUMMY! USED THE SAUCE TOO AND DUSTED WITH POWDERED SUGAR. HAPPY COOKING TO ALL! :

Had this recipe in my file for years. Just made it again. I cut corners and time by filling profiterole with whipped cream from a can, a fast food dessert to feed a craving. Very nice.

An excellent twist on a classic dessert! Love the nutella syrup! Remember to drain the ricotta well or the filling will be runny.

Not that this recipe needs another review..but I just had to! this recipe is out of this world..it's delicious!!! seriously delicious! 3 people devoured it all in less then 10 min : very easy to do and it's so tasty! I've made profiteroles before but with pastry cream, they were tasty but not as tasty as this!! the filling cream is so tasty!! I used the small left over the next day on a crepe :P so yum!! YOU GOT TO TRY IT!!
btw...I baked mine for 25 minutes..my oven is pretty strong...so i suggest you check on them a bit earlier.

I love love this recipe. These puffs came out absolutely amazing! Thank you Giada for this recipe. Also, I ended up baking them for 35 mins as opposed to 50 mins listed on the recipe, so you might want to keep an eye on that.
