Lately I've been rather obsessed with soup-- in the past month or so making countless varieties and picking my favorites. This soup is an excellent addition to my favorites box. it is fantasically easy and really, really delicious! It's also an easy recipe to experiment with. In place of the curry ( which I'm not a huge fan of I've used fresh ginger and chipotles in adobo (delicious. Make sure to garnish it with sour cream, as it makes a big difference in enhancing the soup and cutting the spice. A simply delicious soup!

This soup was easy and delicious! I will definitely make this for guests! However, I only added 1 teaspoon of curry and I will cut down on the pepper next time.

This took me all of 10 minutes to do. With small children around, that is about all the time I have to cook. Plus it is delish!

This recipe is so easy and so good. I didn't have chives, so I put fresh chopped cilantro on top. It taste like lemon would also be good on it. I didn't want to slice a whole lemon, so I used a little sour salt as a garnish. Really good!!!

This recipe was such a hit, I have had multiple requests for it since! But, take my advice and use a blender to process the soup instead of the food processor--I made a mess!

Last year I made this simple and delicious soup to bring to Thanksgiving dinner. It was such a hit that I didn't even get a bowl. It is so easy to prepare and great with a little sour cream.

The soup was very easy to make and was a hit with my husband. It had a great taste with the garlic shrimp and warm wheat bread. Be careful with the cayenne pepper as it can make the soup have too much quick if you add too much.
