Great recipe! Wonderful flavor. Changed the curry powder to 1/2 tablespoon and 1/4 tsp cayenne. Loved this.

I varied the ingredients a little to taste -- added about two garlic cloves (choppedin the beginning, and also used both curry paste and about a teaspoon full of hot madras curry powder.

It blended up well, and I only needed 4 cups of broth (used vegetable broth to keep it vegetarian.

If you find it too spicy, just cut it with sour cream or a little plain yogurt.

My children are not the easiest to feed, especially if vegetables are involved. My children ask for me to make this soup!

Very simple to make and delicious. Because I have children, I used about 1/2 the curry powder and no cayenne pepper. I added about 2 T. of brown sugar (which would not be necessary if the carrots were very sweet and abou 1/3 cup light cream for a little richness. I'm bringing this to a holiday luncheon next week!

This was tasty and very easy. If you control the oil amount and then don't add the sour cream, it is quite low in calories too.

I tried this entire recipe for the night we carve our jack o lanterns...the rest of the recipe is GREAT, but this soup was just to odd for my taste and for the rest of the family!

This was soooo good. I microwaved and peeled a medium sweet potato and added it to the soup before pureeing. I also added a little turmeric to it. Carrots, as well as sweet potatoes and turmeric are very good for you so I am sure that this soup was very healthy. I also like the fact that it is low fat. I used a hand blender to puree the soup, which worked very well and made for less cleanup. I am planning on making this for Thanksgiving dinner, using vegetable broth instead of chicken so that the vegetarians in my family can enjoy it as well.
