    Very, VERY tasty fudge--not hard to make although it must be carefully watched. I used crunchy peanut butter just to be contrary and really liked it, and like most of the others here I like it with a larger amount of peanut butter.

    This recipe was perfect...anyone that gets grainy did not cook sugar long enough..we have not made fudge since I was a kid and my daughter and I decided to try our hands at it. Turned out perfect and really really good...even though it has the marshmellow stuff...(I don't normally like marshmellow, but you cant taste it. Worth the wait...tami h. Muskegon, Michigan

    The taste was great. I followed the recipe exactly but it never harden. My dad used to make the best peanut butter fudge and I was hoping that this one would be similar. But it wasn't.

    This fudge is very rich and good.. I will have to say with those that made it and it turned out grainy. They didn't cook it long enough. You must use a candy thermometer and it must get to 240-250 degrees F. Also you must beat it with a wooden spoon until it gets stiff or thick.

    This fudge tastes great, but I would knock it down a rating because is possible to mess up this fudge. (Vs. the fudge that you can't mess up. My fudge didn't harden properly, this is probably due to how long I let the sugar cook.

    Love this fudge!! Holler!! We followed the recipe tip to use extra peanut butter, and we were not dissapointed! It has a great texture, and set up perfectly!! Our friends and family all agree, this is some of the best fudge ever! Great recipe!! Bam! Give it up for Emeril!

    I have used this recipe for the last 4 christmas seasons with wonderful results. I eventually modified it to my own tastes, using about double the peanut butter (an entire 18 ounce jar and increasing the marshmallow cream to a whole 7 ounce jar.

    I've literally made this many dozens of times, and the only time it ever went grainy was when my heat was too high and I cooked it too fast, or when I used a cheaper store brand peanut butter. Your patience will be rewarded, so don't rush the melting of the sugar too much.

    One single batch makes about 4 pounds, with my modifications, but it seems to never be enough to share.

    OMG!!! This was my first time making fudge. I read most reviews before I made it, to those who said it was grainy, you must not have let the sugar dissolve long enough but if it weren't for your comments I probably wouldn't have either, so thanks. I recommend trying again Its worth it. I am making it again to pass out for Christmas gifts to coworkers.

    First of all: Any ideas on how to convert this recipe to a CHOCOLATE fudge?? I would love to layer them, but i don't trust any other recipes now..

    This fudge is TO DIE FOR. My great grandmother was the famous peanut butter fudge purveyor in my family for over 60 years. I took this fudge to the family Thanksgiving, and everyone said hands down- the BEST fudge they've ever had. I also shipped this from GA to CA and it held up beautifully wrapped up in wax paper and put in a pretty box.

    I did have to make a few batches before I got it to set, as I don't have a candy thermometer. However, I've made 3 successful batches, and have found that if I boil over medium heat for exactly 6 minutes, it comes out melt in your mouth perfect. I also decided to cut the sugar a 1/2 cup and make up the difference with extra peanut butter this last time, and I have to say- I prefer it.
