My boyfriend had an Italian grandmother and he loves to reminisce about her wonderful cooking. Well, he cried when he ate this soup and said it tasted almost exactly like hers. Now THAT is a compliment! This recipe is a winner as-is, and you can play around with it, too.
I've made it at least 6 times, sometimes following the recipe, but usually adding 50% broth and tomatoes, plus short macaroni. (I parboil and add it to the soup 20 min before serving so the pasta doesn't get too mushy or soak up too much liquid. I simmer it longer, too, so I puree only 1/3 can of beans so the broth doesn't get too thick.

Delicious! Followed Giada's recipe exactly as posted. May be one of the best minestrone soups I have ever had! And I made it thanks to Giada! Yes there is some chopping involved but well worth it! The parmesan rind adds awesome flavor too! Do not leave that out! Delizioso!!

WOW, this was great! I did not have pancetta, so I used kielbasa sausage. It was great! My husband said that he would eat this every day for lunch. He hates vegetables so this is a great, easy, tasty and healthy was to sneak some into his diet. He said it was better than the ones that he gets in restaurants. He added parmesan cheese to it (directly into his soup bowl. Really like the way the soup is thickened with the blending of the beans with a little broth. Definately makes 6 servings (not 4.

I didn't modify a thing in this recipe. Giada knows what she is doing, and she proves it with this recipe. The pancetta gave the broth a nice smokey bacon flavor. DELICIOUS!!

I used vegetable stock instead of beef, did not use the pancetta, and traded spinach for the swiss chard. This was YUMMY!!! If anyone is interested, 6 servings = 98.8 calories per serving when made my way. This will be a regular at my house.

Yum! Nice and easy, though chopping takes time. Made this vegetarian/dairy free and omitted pancetta and used veggie broth. Used spinach instead of swiss chard, and a bit of dried rosemary instead of fresh. All these tweaks made a delicious winter soup!

This recipe is awesome and versatile as well. I used a provolone rind and added chopped red bell pepper, italian green beans and ditalini pasta. I quadrupled the recipe and froze containers for my kids at college and to also enjoy some on the next snowy evening!

Fantastic and easy! I added two mild Italian chicken sausage (removed from casings and crumbled as well and it was perfect. Will definitely make again.
