    I loved this! So easy to make and it was delicious! The only thing I did different was add thyme instead of rosemary.

    I love Giada! I admit that I substituted the pancetta fro turkey sausage and the kale for julienned baby spinach but I LOVE THIS SOUP! I also didn't have any rosemary and used cilantro instead of parsley. Perfect for a cold winter day! Thanks Giada!

    Very easy to make and delicious! I made a few substitutions. I used bacon instead of pancetta, turkey broth instead of chicken broth and I used a bay leaf and dry Italian seasoning instead of rosemary and parsley. I also only had a can of roasted tomatoes with chilies on hand. It gave the soup a slightly spicy flavor. The end product was so hearty and flavorful!

    So delicious. My prep always taking longer than stated but the outcome is definitely worth it. Substituted spinach for swiss chard and cooked the pancetta first. Took it out and then cooked the veggies and then added it back. Also used two cans of beans; one pureed and one whole. Yummy!

    Absolutely delicious! I've made this several times and have followed the recipe exactly. Do not leave out the Parmesan cheese rind, as it adds amazing flavor to the soup.

    I was missing several ingredients but it was still great. I didn't have swiss chard, onions or pancetta. I substituted the cannelloni beans for black beans and added elbow noodles for a little more substance. I also added a bay leaf instead of rosemary just because thats what I had at the time. It was very flavorful and will try again, maybe next time with all the ingredients haha

    This soup is divine any time of year. The rosemary and cheese give it depth unlike any other minestrone I've tasted. The only thing is the 'prep' time is more like 1.5 hours ! I make a double batch every time because it is so much work preparing all the vegetables.
    It's worth it though.

    Delicious. Saute the pancetta first as to keep it from becoming to gummy.

    We love this minestrone. Instead of pancetta, I saute one to two pounds of loose hot Italian sausage, but keep everything else the same. We like our soups chunky and stew-like, so this works for us.

    Having read all the superstar reviews, I expected a lot more from this recipe. We felt it too 'stew like' and rather sharp in flavor though the only sub was spinach rather than chard. Not terrible, just not good enough to be a keeper.
