When I googled "chicken stew," this was the first recipe that popped up. Since I'm a big fan of Giada, I tried it. I added some mushrooms and garlic (sauteed them with the vegetables, an extra carrot, and some sherry. I also thickened it with a little corn starch at the end. Other than that, I followed the recipe. I served it with some tomato-cheese focaccia and caesar salad. It was a huge hit!

My family really loved this stew (even my picky eater. Upon reading the previous reviews, I was concerned that it would be too bland, so I made a few adjustments. I started with two pieces of bacon, used the drippings, plus olive oil. Browned boneless chicken breasts, then sauteed veggies. I added crushed red pepper and threw in a handful of flat leaf parsley at the end. Turned out great. I think I'll freeze some for next time and have this on hand for soccer and dance nights.

Well, apparently this was a hit! I cooked it one late afternoon and made sure I tasted as I cooked and it was, in fact, delicious. However, when I returned later that evening to actually fix a bowl for myself, it was already gone! This is even after I doubled the recipe!! We only have 3 people in our household including myself and we're all on different schedules. They were either really hungry or they loved this meal!! The only thing I did differently was instead of serving bread with it, I made some pastini - put a spoonful in the bottom of the bowl and ladled the stew on top of the pasta. Rumor has it that I am required to make this meal again very soon! Therefore, I'm thinking that they loved this meal!!! Thank you for the quick and tasty recipe!!!

Definitely a keeper with some changes. I followed the Chicken Stew recipe exactly and found it really light in flavor. Next time I will add garlic, white wine and more basil at the end.

I'm still teaching myself how to cook, and this recipe was a cinch and tasted delicious! But I do agree with the other reviews that it needs more broth. I personally like a lot of broth in my soup so If you are the same I would add even 2 more cans of the chicken broth which is what I had to do.

This recipe was delicious! I can't believe it is actully healthy, too! The only thing I would do differnet is double the recipe for the sauce. It seemed like like there was much more chicken than sauce.
