This is healthy and oh so good! I also add garlic just before I add the tomatoes and broth. I season the veggies before I add the other ingredients and I also up the veggies. I omit the tomato paste because mine gets thick enough. I add canelinni beans instead of kidneys and I only heat them through then add the chicken back in to reheat!

I hate it when people review a recipe that they've altered beyond recognition! That said, I'm going to be a hypocrite and say I added garlic. However, that was the only alteration and I think this recipe would work just fine without it. It was marvelous! I bought a long baguette to go with it and my father and I feasted. It makes for a very simple, hearty meal. Next time, I'm adding some corn. I feel like it could use more veggies. Great recipe!

This is my "go to" chicken recipe when I need an easy comfort meal. I've been making this dish a long time & vary the ingredients leaving the integrity of the recipe true, ie, extra veggies, veggie stock, mushrooms, chopped zucchini & definitely garlic. My family always looks forward to having this dish. Definitely get some good crusty bread to sop up the juices. Also I like to cook for a week & this freezes well. Yum! Go Giada!!!

Another Giada hit! Wonderful flavor, easy preparation. I read a numver of reviews before I made this dish and I took the suggestion of some to double the veggies. I'm so glad I did for it just made more of a fabulous tasting, low carb, low fat meal.

Great recipe. Add a little flavor by adding more herbs and spices, And if you don't like kidney beans... add white beans instead, right from the can but drain and rinse first. White beans make this dish amazing!

Awesome recipe! Tried this last night and it turned out really well. I did alter the recipe a little based on some of the reviews/comments. I seasoned the chicken with salt & pepper first, then browned it for about 5 minutes. Then I sauteed the veggies with garlic. I also added cremini mushrooms and red pepper flakes for an extra kick. Had it on low simmer for about 45 minutes, then took the chicken out to de-bone and shredded into smaller pieces. Threw the chicken back in to soak up all the flavors of the stew and put in the kidney beans for another 10 minutes. I did have to add extra salt, pepper, and red pepper flakes because it was a bit bland originally. I served it over brown rice and hubby loved it so much he took the left overs to work for lunch!

Amazing and quick! Didn't have diced tomatoes so substituted for garlic roasted tomato sauce with extra chicken broth. So flavorful and added extra veggies and some extra green bell peppers. Simple and easy for a weeknight dinner, a must try!
