This dish is beautiful served on a platter. Very simple yet impressive. I added some smoked paprika for an additional kick and color.

Yum! Dont skimp on the cheese. Its expensive but Costco sell a large block for around $14. In the supermarkets you would pay that for 1/4 of it. You wont regret it..manchego is addicting! It just ties each bite of the salad together. Also....I was shy about adding salt and pepper but after tasting it without I felt it needed something so I added it and it just brought out the flavors. I wanted to "drink" the juice on my plate when I was finished...and no oil! Very nice and healthy. LOVED!

The combination of flavors and textures here is really wonderful--more than the sum of its parts. I think if you didn't have Manchego available or didn't want to shell out for it, you could play around with other cheeses (feta maybe? haven't tried it, but the Manchego is definitely a good choice.

This recipe seems pretty straightforward and simple, but the flavors are amazing. It really is refreshing not to have an oily dressing for once and have the fruit stand on it's own. The onion really hits it home with the orange. This recipe is bloody brilliant and it will be with me for awhile!
