I used home-roasted peppers from the freezer and lightened it by using fat free evaporated milk instead of the cream. I served it over cooked frozen spinach ravioli from Costco. What a wonderful dinner on a night when there was "nothing in the fridge to eat".

This sauce works so well with so many different things. It goes great with smoked chciken and crimini mushrooms over penne. It's also great over grilled portabello mushrooms. I've also made it using fat free half and half and it's still great. Just let it reduce a bit!!!

I've made this sauce to put over bacon-wrapped dates. It is the perfect sauce to complement the dates. We love it! Just wrap pitted dates in bacon, secure with a toothpick and bake at 375 for about 20-25 minutes (until bacon is crisp. After removing to a serving platter, pour the sauce on them.
