    Made these waffles the other day-and was very disappointed. No sweet potato flavor-(roasting them might be a better way to get more sweet potato flavor and the prep with steaming the potato and whipping the eggs is just too much work for a flavorless waffle. The citrus was the only thing I could taste. Won't try this one again.

    This recipe is delicious, especially when you use fresh California Sweet Potatoes grown in Livingston! We make it all year-round, it's a staple in our household.

    These waffles are amazing!! You really can't taste the sweet potato and the grated orange peel gives great flavor. I make these for family or friends occasionally for a weekend brunch, served with fresh berries and syrup. They're a huge hit every time!

    I made these using leftover mashed sweet potatoes from thanksgiving. First I used less milk and butter since there was already milk and butter in the mashed potatoes. Then, as the batter was coming together I realized that I needed more milk and butter and probably ended up using the amount in the recipe. It came out great! But, if i didn't know that these were sweet potato waffles I dont think I wouldve guessed.

    I found that if even slightly undercooked these waffles were very heavy and sweet-potato-ish, but when done for just 2-3 minutes longer than recommended they were fantastic!!!

    I love Alton but these waffles were a bit of a disappointment. I had to add more sweet potatoes to get more "sweet potato" flavor and the waffles were soft coming out of the waffle iron. They did not crisp at all. I may make them again and try roasting the potatoes first too add more flavor. Also, I added nutmeg and cinnamon but it could have used a pinch more. I'll give it another whirl.

    I love waffles. Always have-I have two wafflemakers just so that I can produce in quantity when I have company. I have a regular waffle recipe that I use-and it's great, don't get me wrong. But when it comes down to it, these are just as good at being waffles, and they have so much more to offer, from the beautiful color to the subtle sweetness of the yams to the novelty. I love telling people who've never had them that they've got yams in them-I've converted at least half-a-dozen yam haters with these waffles. Easy, fancy, and great-one of my favorite Alton Brown recipes.

    My kids want waffles everyday! Now I can give them waffles (maybe not everyday and feel good about them. I really like them too!

    I freeze most of my waffles. Try toasting a pair, then put a sliver (or slab of vanilla ice cream for a sweet potato waffle ice cream sandwich.
