    I made this as a first course for 6 on Christmas Day. It was very good but the 2 colors weren't as dramatic as the photo shows. I pretty much did all the roasting, chopping, etc for both soups at the same time to shorten the prep time. I made the soups a couple of days ahead. I don't think the tarragon oil added much, maybe for presentation.

    Made the squash soup and was very disappointed. Threw the leatovers in the garbage, and my husband will eat anything! Can't say that has ever happened in 17 years of cooking for him. what a waste of time

    Squash Soup was excellent. Has a nice earthy flavor and creaminess to it. I added a little cayenne to give it a finish of heat. Also I loved the flavor and aroma of the italian sausage in here as well. I might even try using a hot sausage next time since mild is just for flavor.
    I did not try the parsnip soup.

    I am a huge fan of parsnips and was afraid this soup wouldn't hold up to my standard of how parsnips should taste, but this was magnificient, ditch the ham and top it with cheese and croutons! Btw watch the honey, do not wanna overdo that.

    Well, I couldn't taste the squash soup (due to allergies but, my significant other said this was the best he had ever had. I tried to share it with some friends, but he wouldn't let me give a drop to anyone. so, this soup is in my recipe box as a keeper. I wanted to make the parsnip soup but the grocery store was out of it so I guess I'll have to wait. I did toast the seeds and put them on top of the soup,I also fried up some mushrooms to top it off also along with the tarragon oil.

    Roasted Parsnip Soup

    This stuff was BANGING! First exposure to parsnips after watching AB's parsnip episode.
    Soup had great texture and was a wee bit sweeter than anticipated. Did not use the ham and it was tasty.
    Looking forward to roasted parsnips as side dish for another meal.

    Will definitely make this soup again.

    I only made the butternujt squash soup and it was great. Very flavorful and comforting on a cold night. I have been looking for a great squash soup and this is it!!

    This is the second time I have made this soup and it is still fantastic ! The recipe is easy to follow and the taste is out of this world. I doubled the batch so I can send some to a good friend who gave me Christmas cookies and they were very impressed.
