...the cookie crumbles. Though they came out delicious, I had the same problem another reader had with the dough being a little too crumbly. I followed the directions to a T, except I had to combine the ingredients with a spoon, since I'm not lucky enough to have a fancy food processor. The ingredients were blended well, but maybe that made the difference.
The hardest part was forming them into balls without them falling apart when I squeezed them or when I tried to make the thumbprints.
Any ideas? Maybe adding a few teaspoons of water? Or do I need to invest in expensive equipment?

A great cookie. If you flatten your dough into a 4 x 8 inch rectangle before chilling, you can easily cut 1 inch rows of evenly sized pieces to get 32 cookies. I made 64 1/2 oz. cookies and baked for 13 minutes--for a more bite-sized treat, since these are so rich.

They are great cookies, but if you don't really cook alot, the only thing you would have to go to the store for is the coconut.

I swear that these are the best cookies I've ever made. My entire family LOVES them. Easy to make and the reactions from everyone are worth it...I've made 3 batches in 7 days. My granddaughter loves to do the rolling, thumbprint and spooning in the jam. I flatten them out more in order to make a bigger cookie.
