These cookies were not only easy but gave my taste buds quite a treat - very refreshing combination of flavors. I made one batch but now am going to make a couple more before Christmas because I know they will go fast. EXCELLENT!

My 7 yr old daughter and I loved making these. We used strawberry jam instead of rasberry and they were just sinful. The cookie has a flavor reminescent w/ that of lemon poundcake crossed w/ lemon cheesecake. Can't stop @ just one. Way to go Emeril! We love you.

The lemon flavor in this cookie is outstanding. It was very simple to prepare, my 4 yr. old daughter helped with the thumbprints.

Terrible results! Only made 24 cookies not 4 dozen - impossible to make smaller and still be able to fill them. Cookies not attractive.

These were really easy to make. The only thing is that I did not use the Chambord because I did not think it was worth buying a 30 dollar bottle for 1/2 a teaspoon. But they were still wonderful!

Great cookie recipe that can be frozen to use when needed. You can also doctor-up the recipe to suit your taste. Instead of the raspberry jam, Chambord and lemon juice, I have substituted different flavored jams, dulce de leche, chocolate, walnuts and coconut flakes. My favorite is strawberry jam in the middle of the cookie with chopped walnuts all around it. Use your imagination with this cookie recipe very versitile.
