This is an incredibly flexible recipe for desserts for crowds. I put a variety of things in it--nuts, chocolate chips, crushed toffee, whatever is on hand. I prefer to bake it in a jellyroll pan, with the temperature reduced to 350 for 15 minutes, then decreased to 250 until it is done. I use applesauce to replace the oil, which helps with the healthy quotient.
I also have been known to put icing on the top, depending on what is in the cookie itself.

The cake mix in this cookie leave it soft for days after baking! It is really easy to make oatmeal cookies and have them turn into hard crunchy frisby like disks, but not these. I also use golden raisins and cut the nut portion in half as per my particular tastes. But this is one of my staple Christmas cookies because the cake mixes go on sale and I stock up! Give it a try and you won't regret it!

They are super easy and quick to make and everyone loves them but I use golden raisins instead of dates.

These are so delicious, you can't even imagine! I add chocolate chips, coconut and nuts to make them even more spectacular. Tip: Put the dough in the refridge to harden so the cookies remain plump and not flattened once cooked.

I loved these cookies! I was a little unsure of at first (because I had a horrible experience making the candy cane cookies, but they were very easy to make and taste SO good! I used apple pie spice instead of pumpkin and changed the oven temp and time to fit my oven. They also made the house smell wonderful.

My sister and I have been looking for a way to include the dreaded oat in our diet and this cookie can be changed to include the pecan, which is in abundance in our area.

These are delicious cookies. Soft and chewy (they crumble easily with a great blending of flavors. They are a tad greasy, but when I make them I simply can't stop eating them.

I changed some of the ingredients to what I had on hand. Old fashioned oats, didn't toast the walnuts and used raisins. Delicious! To those who found the cookies dry, please remember oven temperatures vary. Cookies are done when they still look somewhat moist. This goes for all soft, moist cookies.
