I've been wanting to try making different cookies for the holidays- Ina's Jam Thumbprint cookies were a perfect fit.

The recipie is very easy to follow, resembling a sugar cookie dough- minus the egg.

The thing that I like about this recipe is how much you can vary it with all types of jams...You can make a cookie to satisfy just about anyone!

    Thanks Ina!

I added a touch of milk to my dough and it came out fine, however, when I took the cookies out of the oven I had to use a chisel. I could not get the cookies off the sheet. I ate more cookies than I could salvage. Towards the end, I made 2 batches, I figured it out. Don't roll into balls, but rather into little patties then make thumbprint while dough is in your hand. Then brush w/ egg wash and sprinkle coconut on top. Then add jelly, I found out that when I made the cookies as directed and when it came to making thumbprint into cookie that it was making it stick to the pan, hence the reason why it was so hard if not impossible to get off.

These cookies were amazing although I felt guilty eating them because of all the butter. I also found if you don't tell friends how much butter is in them, they will eat them all night long! I do agree with the reviewer that said you should not overmix the dough. That is likely where the toughness of the cookies came into play. However, I am a baby cook and do not own a stand up mixer at this time. I used an electric mixer, and, while it was a pain, the cookies turned out delicious and the dough was not crumbly at all. It is definitely important not to overfill the cookie with jam. All in all, very delicious and worth a try if you are hesitant.
