I wanted a special cookie to add to my traditional family recipes.
These were very easy and the results were spectacular. I used homemade raspbetty jam as an extra special touch.
I will add the jam thumbprints to my list for every year!

When I heard about the toasted coconut and jam cookies, I knew I wanted to try them out as soon as possible. I thought the cookies came out ok. I used strawberry jam and rasberry preserves. The toasted coconut gave it the special kick. Although two of my critics told me that the cookie was to tough..I replied that I used all the ingredients given..Overall the cookies were good.

First off, let me say I am not much of a cook or baker. After reading the reviews and noting that their were mixed results; I was a little hesitant to try this recipe..but they looked so beautiful on the show.
Needless to say, these turned out perfectly! I am sorry that others have had some problems with the dough. I followed the recipe EXACTLY. (room temp. unsalted butter, used STAND mixer, etc Although I am no expert I suspect that those who had issues with crumbly dough did not use a stand mixer.
My dough was very well mixed and was not crumbly at all. Also, mine did not burn on the bottom..but I put them in for only 22 minutes and one level above the center rack in my oven after reading that someone had burned theirs on the bottom. I also used parchment paper..although I don't think that had much to do with my success; but made for easy clean-up. I also used raspberry and cherry preserves and did not overfill..they were DELICIOUS!!
If you do not have a stand mixer; try mixing the dough maybe a bit longer than you normally would??
To the post from Texas..I hope you give this a try- they really are great!

I made these...the dough was pretty dry. I added a few splashes of milk which seemed to work. The first couple dozen...burned on the bottom and were not cooked in the middle. I lowered the temp. to 300F. While rolling them in the coconut, I left a space open for the bottom so the coconut wouldn't burn on the bottom. I also made the indentations for the jam deep, not light like Ina says. The next couple dozen came out a success.

What a beautiful and delicious Christmas cookie recipe. The cookies looked wonderful and tasted fantastic. Others' problems with "crumbly dough" could be from not thoroughly beating the butter mixture with the flour to fully incorporate -- I had to use the stand-up mixer for this one!

These cookies were delicious. I feel bad for those who had problems with their dough. I made one recipe and then decided to make a double recipe and I had no problems. The dough was moist and not crumbly. My butter was softer than usual from sitting around a warm kitchen.I buy flour from the health food store so that it's fresher, I hope. I have found Ina's recipe's easy and foolproof. Could it be the flour you're using? Maybe it's heavier and dryer? I don't know but good luck next time.

I was so excited to make these cookies, and they sure did not look like the cookies on TV! First the dough was crumbly, then they flattened out while cooking and the jam ran out! I followed receipe to a "T", so I can't figure it out. It was 80 degrees here in California yesterday, could that be the reason?

I totally rocked at making these jam thumbprints. I was so excited with how well they turned out. I didn't have a scale, so I was a little concerned about that. But they turned out just great! I used plum jam and apricot preserves in mine. They turned out beautiful and they were delicious. Thanks for the yummy recipe.
