    Delicious! I added chopped black olives and fresh chopped parsley and basil! This is also delicious used as a layer in lasagna or stuffed shells with a little ricotta cheese. Go with a light tomato sauce and romano cheese on top.

    This spread was wonderful. It was creamy,thanks to the roasted eggplant. I'm a big fan of roasted vegetables, so this was definitely a winner for me. And it was a hit with my hubby too. Will make it again and again and again. Thanks Ina.

    This is delicious! I am having friends over for lunch and made it as an appetizer. Following another person's recommendation I bought flavored crackers but I think this spread stands alone wonderfully and will buy plain ones next time.

    I used what you had for the recipe, but instead I roasted the eggplant and mixed with sauteed peppers, onion and mushroom in pot and added th tomato paste. We had it over rice it was delicious. So, you can also have it without putting it in a food processor for a spread

    The dip on its own lacked a little something for my taste. I think I would enjoy it more if I added capers or olives like someone suggested. However, I thought it was better match with a savoury flavourful cracker such as a vegetable cracker, rather than pita bread.

    I watched the repeat schedule of the show a couple of weeks back on food tv and was itching to make it to eat with corn chips. It was awesome! Perfect amount of sweet, salt and smoky. I used the broil option on my oven (I just wanted to try it out since I am new to baking and apparently I was right! It was our evening snack and mu husband loved it! I used a little mozzarella in the dip after blending. Yummy!
