    These were fabulous! I had a dinner party and served them as appitizers. I love the recipe because much of it can be done ahead of time.

    This recipe was FANTASTIC. However, I did not use Giada's risotto recipe - I had some leftover chicken, mushroom, and pea risotto that I wanted to do something with so I made these arancini with the leftovers following Giada's instructions exactly. They were AMAZING. Actually, I think they were a lot better than the risotto alone!!

    The risotto took a little longer than it said. It was the first time I made risotto and it tasted great. The rice balls looked exactly like they did on the show!!! They were excellent!

    What is most excellent about this recipe is the risotto base, it's amazing. I wasn't as impressed by the balls and frying them, making the risotto suddenly quite unhealthy. In all, it's good and something original.

    This dish is absolutely and truly fabulous! I served it as an appetizer. HoweverI didnt make my own risotto though and I omitted the dried porcinis. I bought the Archer Farms brand (Super Target Mushroom Risotto mix and I added the white mushroom, garlic, onion, butter, white wine mixture to it and it tasted great!

    Will definitely serve again and again. Grazie Giada!

    I made the risotto & never completed the recipe by frying it all up...no reason to bother, the risotto was great just the way it was ! Thanks Giada.

    These were great, but the risotto recipe lacked some flavor. But the cheese and the frying compensated for it and they tasted great.
