    The casserole turned out perfect. My meat and potatoe husband never missed the meat that wasn't in it! I will be making this one often. Great, quick, easy and a healthy Meal!

    This is my first Rachael Ray recipe, and it was wonderful! Quick, easy and full of flavor. Even my husband (who isn't the biggest squash fan gave it a thumbs up.

    This is the most delicious casserole!! I serve it at every function, and people always want the recipe. Also, since I am on a diet, I took out the polenta and ate this for 3 days straight *if it's just two people, it lasts a little while, and I lost weight, it's tasty and healthy!! I would recommend this recipe to everybody.

    Easy and tasty. I added a can of rinsed pinto beans for some protein. My family liked it. Will definitely make again.

    Excellent, filling casserole that can be the main course in a vegetarian meal. Anyone would like this that likes Mexican flavors. I might add a bit more chili powder.

    i'm always wanting something new to serve alongside the chicken breast or fish filet. this is delicious and easy. use low fat cheese. crumble the polenta and sprinkle on the top so can use less of it makes it healthier.

    I've never tried a Rachel Ray recipe, but this one looked so easy I just went out and bought the ingredients and cooked it from memory. WOW!

    I added chicken sausages because I knew my son and husband would complain about no meat. It would have been have been fine without it. I froze the leftovers. Today my son was looking for them and was disappoinged they were in the freezer. That's how good this recipe is.

    I also made the quesadillas. What an easy way to do these! Thank you Rachel Ray! You are my heroine. I'm going to buy all your books now.

    I made the entire recipe even though there are only 2 of us. It was a delicious dinner...and lunch...and dinner again This was my first time cooking with polenta and I will be making this dish again.

    We actually discovered that the flavors mingled overnight and tasted even better the next day. I will be making this as a cook-ahead dish that I can just heat up on busy nights.
