This would be good, but the lady below me is right, it won't have much flavor. To make this waaay better leave out the milk and flour. It dilutes it too much. Use a quarter cup of cold water with two tablespoons of cornstarch at the last 15 minutes to thicken it. And for flavor and a little kick, add a tablespoon of Emerils Essence. The recipe is on here, and included in most of his recipes. Then add a half cup of grated parmigiana to the soup BEFORE you serve it. I love most of Rachels recipes, but sometimes the site gets the ingredients wrong too.

This soup had very little flavor. Maybe I should have put a palm full of salt in at the end to be able to taste anything.

I can't say enough good things about this recipe. It is delicious and easy to make. I don't normally care for cauliflower, so I was understandably skeptical. It turns out that I do in fact like cauliflower, but only after making this soup : I added some chopped carrots with the onions & celery and towards the end of sauteeing the veggies, I added some fresh garlic. I used about 6 generous dashes of Cholula hot sauce with the chicken broth and I blended all of it very well with my blender. It is amazingly delicious. I'll be doubling the recipe next time so I can freeze some for later. If you're considering trying this recipe, do it - you'll be happy you did!

I thought it could use a bit more kick so I added a pinch of cayenne and a dash of Emeril's essence. I did add some more salt also. I did have some leftover queso fresco so I put it in the soup. It was delicious!

I have to agree with some other posters that this was just not very flavorful. Added some cheese and lemon juice to help it out but still wasn't all that. Sorry, love Rachel but this just didn't do it for me. I will keep searching for a keeper caul soup recipe.

A wonderful way to eat cauliflower. As stated previously a little bland but doctored up it tasted fantastic. A definite repeat.

I have been making this soup for years. It is a great soup alone and a great base soup for add ons. I leave out the milk or cream to keep it low fat and i don't add the flour for my husband who can't eat carbs. I always make a double batch and freeze it for quick meals. Its a great way to get my 3 year old to eat veggies. She loves dipping grilled cheese sammies in it and I put it over some pasta with parm chees and a bit of butter for her. She loves it. For everyone who think this soup is bland. All recipes have to be ajusted to your taste. Quick Tips: Make sure everything is sauteed very well, that adds alot of flavor, Add garlic in when sauteeing, Puree to your likeing and add the stock or broth in slowly so you can make it as thick or thin as you like it.

I had some cauliflower to use up, and let me tell you, this recipe is SO good! It uses minimal effort and has rich taste. I used fat free half and half and I think the taste was still velvety and rich. I also used a bit of crushed red pepper, and added some carrots. I blended this probably a little too much - which only makes it smoother, but I missed the chunks of cauli while eating it. Also added about 3/4 cup of cheddar cheese during the simmer - DELISH! Made this with wheat rollls and my hubby LOVED this - and he is not a vegetable eater! This is a tasty way to get more veggies into your diet. Thanks Rachel!
