    It was delicious!! It was quite sweet but with that savory hit of onion and curry it was perfect. It paired perfectly with a toasted turkey BLT!! Yum yum!

    Enjoyed the texture, aroma and look of the soup. Using the apple cider is a definate sugar high. I'll use the chicken broth next with NO cider as the apples add enough sweetness and I might reduce those! The curry adds a wonderful rich punch to this high fiber and great tasting soup.

    Love it! I used pears and apples, a little allspice, a hint of nutmeg, a smidgen of fresh ginger (left out the curry as my children wont eat it and it is now a holiday favorite

    I loved this soup and have figured out a way to help out when in a hurry. I slice squash in half, fill with chopped apple and roast until tender. Put in fridge and use the next day in the soup. I follow all directions and then just add my already cooked squash and apples heat through, blend with immersion mixer. It makes this the fastest first course ever!

    This soup is truly wonderful. I served it with Ina's pork loin and fennel stuffing for Christmas Eve dinner and it was a huge hit.
    My only negative is that it is highly labor intensive, so don't go in thinking you will whip this up in a hour - it took me nearly 3 1/2 hours start to finish. It's worth it but I would highly suggest making a big batch and then freezing some for later as it's too time consuming to do on a regular basis. Nonetheless, it tasted wonderful!

    Delicious! I used an immersion blender and cut down on the mess. Also, I agree that it is a little on the sweet side. I think next time I will either do half juice/half chicken broth or just broth. Wonderful recipe though- the squash, curry, and apple flavors are great together!

    This is my first attempt at this recipe. It has interesting flavors. I used a blender to puree it into soup and it worked well. I actually prefered the consistency and flavor of the soup before adding the cider. I will probably add a few more apples to the cooking process and leave the cider out next time. Or only use 1 cup.

    This soup is delicious! It has so many different layers of sweet and savory flavors. I only used 1 cup of apple cider because I didn't want it to be too sweet and I liked the thicker consistency. This is my second time making it and this time I used an immersion blender instead of a food processor- it was much quicker and easier to clean up. This soup is very healthy too!
