    This elevates cabbage from a lowly peasant vegetable to something quite refined and very delicious. My initial thought was that it would need some acidity, like a dash of sherry vinegar, but realized that I should leave well enough alone once I tasted Ina's recipe.

    Amy's Smoked Sweet Onion and Cabbage Sautee

    1/2 pound smoked bacon, cooked and drippings reserved
    1 large head cabbage
    1 tablespoon salted butter
    1 large sweet vadalia onion
    1/8 to 1/4 cup granulated sugar
    1 teaspoon kosher salt
    1/2 teaspoon freshly ground black pepper

    Rinse cabbage and pat dry with paper towels.
    Cut the cabbage in half and, with the cut-side down, slice it as thinly as possible around the core,
    as though you were making coleslaw.
    Discard the core.

    Fry bacon until crisp, remove to paper towels to drain.

    Melt the butter in a large saute pan and add onion.
    sautee for 5 minutes.

    Add the cabbage, sugar, salt, and pepper, pour reserved bacon drippings on cabbage and saute for 10 to 15 minutes, stirring occasionally, until the cabbage is tender and begins to lightly brown. "do not over cook or it will get to tough"

    Crumble the crispy cooked bacon on top.
    Season, to taste, and serve warm.

    This is simple and tasty way to cook cabbage. It's buttery with a natural sweetness. Unlike any cabbage I've had before. It went beautifully with the pork roast.

    you will love this recipe. I like cabbage raw or cooked, but for me this is the best cooked recipe. It is so much better than boiled cabbage. It is so simple to make and has an amazing taste.
