    My brother-in-law is into cooking so when he came over for dinner I used this one (my second time. Coconut shrimp seems like this complicated thing but its not. Just make sure you leave time to clean the cover off teh shrimp, soak them in cold water a bit, then to batter them up. Its time consuming. Also I used shredded coconut and you really have to pack it on for it to stay on the shrimp. I might try a coconut flake next time.

    These were very, very good. Since I'm a novice cook I always take longer than 30 minutes to make any of Rachel's recipes, but that's ok with me as long as the outcome is worth it ... and it usually is with Rachel's recipes.

    I really loved this recipe, in spite of the clean up. I love to read the reviews first, and if I decide to make the recipe, I print them out and attach to my receipe. I find this really helpful.

    The Coconut shrimp was a BIG hit for my mom's B-day party. I used japanese bread crumbs they stick to the shrimp really well and have a great flavor.
    These coconut shrimp is the best I have ever tasted Two thumbs up to you Racheal your AWESOME!!

    I liked this recipe - After reading other reviews stating the shrimp was too sweet, I used unsweetened coconut. I think a half sweetened and half unsweetened combo would work the best!
