    This was SO simple to do and tasted fantastic. I doubled up on the oil/garlic/herbs. When the potatoes were finished baking, I cut each in 1/2 and generously drizzled the infused oil overtop - Served with a side of fresh sour cream.

    These were absolutely delicious! They were a little crispy on the outside and tender on the inside. The only thing I found is that the Herb de Provence spices were a little bit burnt so I had scraped off some of it before serving.

    I really liked this simple recipe. You can throw it in the oven and prepare the rest of your meal without worrying about it. I used fresh thyme and rosemary for my herbs and they turned out great!

    So simple and no fuss, you can throw this together quickly then not worry about them. They're nice and crispy on the outside and it's gooey, melt-in-your-mouth deliciousness on the inside... go make them now. No seriously, go!

    I used baby red, white and blue potatoes and herbes de Provence with lavender. This was EXTREMELY easy and incredibly delicious! I highly recommend this dish.
