I am a real fan of lentils, and was intrigued when I saw them combined with plantains. Enamoured of spanish cuisine as well, I decided to try this recipe, althought I didnt have cheesecloth,fresh herbs or cinnamon sticks on hand. This recipe has taught me to make sure i have cheesecloth on hand for the future. Instead of fresh cilantro, I added a tablespoon of coriander seeds, and was not too thrilled to be chewing on the seeds later on. I did capture the flavour tho. Instead of the cinnamon sticks I added a teaspoon of cinnamon. Although I love garlic, I thought the 11 cloves were too much so I used 8. I used only one onion. I used all 8 cloves, but will use only 4 or 5 next time. Had no vegetable broth so I substituted 3 packets each of Goya chicken boullion and Goya beef boullion, with fantastic results. I also added two tablespoons of a new product by McCormack called Smokehouse pepper. This gave a nice smokey, spicey kick to the finished product. Soup came out superb. I will definitely make this again !
