I have made this twice, first time I did not get to try it as it was made for a friend at work for an Oscar party he was attending and asked me to make a cake for him for it as I do lots of cake decorating. I'm known as the Birthday cake lady at work as I bring them for everyone I work with. So I thought a cake of Wolfgang Puck was perfect for it, as he does all the cooking for those Oscar parties. I was told it was absolutely outstanding, but very rich.

So I remade it for Father's Day today, well okay it took me a couple days to do like the last time. As I did the cake one day then the Mousse the next, but let me tell you hands down it was ABSOLUTLEY THE BEST CAKE I HAVE EVER MADE, and I have made A LOT of them. But it was so worth all the time and effort I put into it.

My future daughter-in-law told me today that she wants this for her Wedding cake, fun, but I know it will get a lot of raves like it did today from my rather large family.

So how did I decorate it? I did not use the Ganache or cocoa to top it and used a white chocolate buttercream for my crumb coat and topped it with a white rolled Buttercream which taste so much better than rolled fondant then I decorated it. And it worked out great.

If you want true indulgence, this is the recipe. It isn't difficult just requires time & patience, but worth every second. I agree with the other reviewer, do not bake more than one sheet pan at a time. I ruined one pan by doing that, but I still had a 12 layer cake.

This cake is very impressive but a lot of work. It took me 4 hours, but it was definitely a crowd pleaser. I made the cake twice, encountering some problems the first time which I avoided the second time. The good thing is that even if you mess up half of the layers (which I did the first time, you still get an impressive 8 layer cake.

The hard part is making the genoise. It is difficult to get the layers to bake evenly to the desired consistency. Spreading the layers evenly around the pans is tricky, since the batter is sticky and hard to distribute. If part of it is over-baked, it gets thin and crispy. If it is under-baked, it is sticky and tears. Here are some tips that I came up with after making some mistakes on my first attempt. Rather than dumping the batter directly into the pans, I split it into 4 same-sized bowls so I could easily judge that I was dividing the batter evenly. I found that pouring the batter around the perimeter of the pans and dragging it into the center worked better than dumping it into the center and trying to spread it to the sides. I tried baking two layers at a time as was done in the show, but each time the lower layer was ruined--either crispy or sticky depending on how much extra time I gave it. (My oven is on the small side. On the second try, I baked each layer independently and they all turned out fine.

I used only about half of the coffee syrup and ganache.

I have been eating left-overs from this cake for a week and haven't gotten sick of it, which I normally would. As much as I like this cake, I can't see myself going through the effort of making another unless someone specifically requested it for a party.
