    This a a great tasting recipe. I have made it a few times now and my boyfriend and friends keep requesting it. I have never loved goat cheese so much. (It is great on burgers too. Thanks for the great recipe Emeril!

    Used a mixture of goatcheese, Boursin, chopped sun dried tomatoes, pesto and a little butter. I froze the cheese 'logs' before stuffing the breasts. Served it with Iraeli Couscous and a light parma rosa sauce. Easy and incredibly flavorful! Serving it again tonight, for a charity function, whereby our guests have paid $500 a couple to attend!!

    This was my first experience with goat cheese that was not on a salad. It was a very interesting way to use it. I liked it a lot. I will make it again

    This recipe was great and I modifyed it to go on the gas BBQ rather then use the oven and heat up the house during summer. The chicken cooked very quickly and came out great!

    I've also made it a second time and just mixed pesto with the goat cheese and stuffed the chicken that way, it was yummy!

    This was an awesome meal. My guests were devouring it and complimenting me at the same time. I served this with a potatoe dish from Paula Dean. It was a great combination. The meal was also a pretty simple one and something you can easily find the ingrediants for.

    This recipe was so good. I made it for friends, a few of whom are extremely finicky. Nothing but rave reviews from the very cirst bite. So delicious. The chicken was moist, flavorful...one of my favorite meals.
