    I've always enjoyed making frittatas. This is the best one, yet. It just tastes so sophisticated.

    I had never made a fritatta before - but this recipe was so easy! I used proscuitto instead of canadian bacon (added it just before adding the egg to the skillet. I don't know if it was the ham or the parmasean or both, but the dish as on the salty side (and that's saying alot coming from me! , so perhaps next time I would omit the kosher salt. Though my friend who ate the other half of the fitatta didn't mind how salty it was.

    I sort of "halved' the recipe because I only had three eggs and was only cooking for two anyhow but it was easy to do. I served it with plain Greek yogurt and honey. Will DEFINITELY be making again!

    Absolutely delicious! I was looking for a way to use asparagus and had friends coming over for brunch so a frittata sounded good.
    I did modify for our vegetarian eaters so this may not be a good review of the actual recipe.
    No canadian bacon but used up some orange bell peppers I had in the fridge, it added a nice touch of color too.
    Added parsely since I had some too and feta cheese because I wanted to use it up. I also had 6 eggs and used them all.
    Sauteed veggies, added the eggs and feta and finished in the oven.

    Delicious!

    Since I'm once again watching my waiste line after having twins nine months ago. I'm back to geting Low Carb again! This recipe was great. I was in the mood for asparagus and came across this recipe on the site. Yes, it was easy to prepare and the taste was awesome. This was dinner last night and lunch today!
    I think I picked a great choice.

    This recipe is really good, but you can use any combination of fixin's you like and it will come out good! I've made tex-mex ones with corn, beans, and peppers. Any leftovers I have in the fridge basically will work - especially steak tips... with a nice sharp cheddar.... Mmmmm.....
