I absolutely loved these pancakes! I didn't expect them to turn out so yummy and perfect. The pancakes were light and golden fluffy bites of joy with the delicious Banana-Pecan syrup which gave each bite a crunchy taste of pecan and creamy melted bananas. I added fresh Strawberries on top of the pancakes which gave a freshness to each bite and balanced out the sweetness of the syrup. It was so good it could have been served at a restaurant!

I'm a waffle person but my boyfriend is a pancake guy. This recipe has made compromise easy. I haven't made the syrup yet but the pancakes are really tasty.

I will never make pancakes without ricotta again! I switch it up and use blueberries or chocolate chips in the batter. And I also vary the syrup I use. These are awesome!

I have made this recipe 3-4 times and love it. I vary the sauce by using sliced apples and walnuts (with brown sugar, syrup and a bit of apple juice - You can add cinnamon or nutmeg to the batter as well for a fall treat - or make blueberry sauce for summer. These pancakes are light, sweet and delicious! It is now our Sunday staple because I always have the ingredients and its quick to make. It goes with whatever fruit topping you can pull together. Never would have thought of the ricotta, but it works! My son doesn't like pancakes but always eats these...

Holy cow ya'll!! These are wonderful pancakes. I've always got bananas and pecans and I loved the combination. The pancakes themselves were even fluffier and more moist than a regular pancake. Can't wait to try them again!!

sometimes i use my electric mixer when i make these and sometimes i don't. they're fluffier and better when i use the mixer--but they're also quite tasty when whisked by hand (and faster to make ;-. the batter will also keep a couple of days if you have any left.

This recipe is delicious, easy, and crowd-pleasing as written! However, I also made it a second time (per the request of my nieces and nephew with the following additions: (1 I cut back on the flour to make the batter a little thinner; (2 tripled the amount of sugar called for (the cheese flavor still comes through, but they're sweeter and (3 added cinnamon and vanilla to the wet ingredients. I did not make the accompanying syrup recipe (if I had, perhaps I wouldn't have added the sugar to the pancake batter itself???, and instead just served them with real maple syrup--absolutely divine!
