My husband to loved this reciept and he is hard to please. It was quick and easy to make. I used broccoli instead of sugar snap peas which worked well.

i never dreamed something that good could be so quick and easy. It is a great blueprint for other stir-fries (although the scallops do contribute to the quick and easy quite a bit since they are so easy to cook. I used much less butter than recommended, though, and it was fine. I used about 2T. with the first batch and didn't add much for the subsequent batches.

This dish is simple and delicious. Rice on the side is a great addition. It also works well with a variety of veggies.

I made this dinner on a last minute whim. I wanted to make something with sea scallops. (My family often gets what I crave...with in limits It was very good and easy to make. To add to the family dinner I made some basmati rice to go with the main dish and it was great. It helped sop the juices from the main ingrediants. My 6 year old liked the meal put my preteen daugher 10 yrs was picky about eating the scallops. I told her she didn't know what she was missing out on. If you like seafood and scallops it was quick and easy. If you like all the ingrediants listed you should enjoy this easy dish. This is coming from a Seattle gal who is now living in Wyoming. Enjoy!!!!

This is one of my favorite meals from Food TV. The flavor is just outstanding; my friends eat the last bit of vegetables. The best of all, it is soooo easy to make!

Couldn't have been easier! So much flavor for so few ingredients. The only thing I will do differently next time is to slice the peppers instead of dicing.
