    I am not a good baker but decided to try these and was bold enough to even try some modifications....they got rave reviews! I left out the raisins (because I loathe them and replaced the pecans with cashews (what I had on hand and also swapped butterscotch morsels for the white chocolate. Otherwise did the recipe exactly as written and they turned out great. Totally fool proof basic recipe and definitely recommend!

    The only thing I did was up the flour to 2 cups. Did one batch with raisins and white chocolate and another with peanut butter chips and walnuts. They turned out perfectly.

    These cookies are really runny and flat. Perhaps if put onto four sheet trays, they wouldn't turn into two giant flat cookies. Maybe I would add another half cup of flour if I made them again.... But most likely, I will find another recipe, as they look nothing like the photo, and were really disappointing.

    I just made these cookies for the first time and really wish I would have read the reviews prior. I put the batter on the first two cookie sheets and thought it looked runny, but didn't realize ;until I pulled them out of the oven how runny they were. They were one big blob on the cookie sheets. I then read the reviews to see if anyone had had the same problem and they had. I added more flour like the others suggested and the rest of the cookies turned out fine.

    I own a sandwich shop and usually make huge choc.chip cookies; I wanted a change so attempted this recipe ; making a large cookie turned into a run-into each other cookie which I could not get off ot the sprayed pan

    I used 2.5 cups of flour in addition to the two cups of oats..Worked fine.

    Should have read the reviews first, I too ended up with one big, runny cookie on my first sheet. Added just shy of another cup of flour to the dough, and the rest were very moist and tasty.

    I am not a baker (my sister is, but I will cook up a storm. I made these cookies a week before the holidays and by the time Santa was on his sleigh I had to make 2 more batches. I have to admit, I left out the chocolate & the nuts, so I had an old fashion oatmeal cookie that I could not keep in the cookie jar. I would suggest as someone else did to use a teaspoon instead of a tablespoon to drop them. This batter is somewhat loose and it really spreads. If you want 1BIG cookie then use the tablespoon, but if you want everyone to have 3 or 4 I highly suggest using a teaspoon :-...so enjoy.

    How on earth could a professional chef allow such a mess of a recipe to represent him on the Internet? I followed this recipe precisely; what resulted was a rather tasty mess of flat, thin, stick-to-the-baking sheet cookies, I ended up throwing them into the trash. It's really too bad because I had intended to take them to a charity fund raiser this evening - no way! I have no idea how anyone else could say that the recipe was anything above poor. Obviously, Emeril has not attempted this recipe himself; or, he omitted some critical step from the process. I have tried many, many other Food Network recipes, but I must say that this is the worst.
